Hey, I've posted a few bugs on here but this is the first one that I don't have any actual MCreator-created logs, I only have the OS-created one. It shouldn't matter what Java I have installed as MCreator should be using the bundled one.
The only information I have is that I open it for first time launch and it loads until whatever is after or during "Initializing User Session".

Actually I do have some more information that may or may not be helpful.
iMac Mid-2007 (20-Inch) with:
-3GB 667 MHz DDR2 SDRAM
-320GB 3.5-Inch HDD Storage
-ATI Radeon HD 2600 Pro 256 MB VRAM GPU
-2.4 GHz Intel Core 2 Duo CPU
OS: Mac OS X 10.11.6 El Capitan
I have quite a few old Macs and this one is decent for 2007.
I also know that MCreator worked on this machine before, but it wasn't the same version. I have MCreator working on 2 other 3 other Macs, one from 2015. one from 2009, and one from 2010.
This is the eldest. but it shouldn't matter. It's just as powerful if not more as the 2010 laptop and the 2009 mini.
Requirements change and increase.

...I ran it on 2GB on a similar spec Mac mini...
It was slow but it worked.
