A mini mod where all the entities have a 30% chance to fail their attack these entities can be from a panda to an iron golem

Be very careful you can miss a lot of attacks!

This can cost your life!

Enchantmets:

Stability: Inestability is a rare enchantment it reduces the probability of missing the attack

Stability 1: Reduces probability to 20% (Probably it will be changed in the future)

Stability 2: Reduces probability to 10% (Probably it will be changed in the future)

Curses: 

Inestability: Estability is a rare curse, it increases the probability of missing the attack

Inestability 1: Increases probability to 40% (Probably it will be changed in the future)

Inestability 2: Increases probability to 50% (Probably it will be changed in the future)

The enchantments aren't enable in port 1.12.2 but the probability to miss the attack is lower (20%)

After weeks of inactivity because of personal issues finally Beta 4.0 is out this version adds:

New Curse: Curse of inestability, This curse increases the probability to fail your attack

-Level 1: 40% of miss the attack

-Level 2: 50% of miss the attack

New Features:

-Now when an entity dodges your attack will glow for 10 ticks

Bug Fixes:

-Sometimes cave sounds sounded instead of breaking sound

There could be an enchantment for weapons to reduce the chance to fail the attack or an enchantment for armor to slightly increase the chance enemies will miss you

an enchantment that would be the opposite of the mod's proposal, that is, as much as you have a percentage of missing an attack, but also a percentage of hitting two attacks once, it could be an enchantment or a feature of the mod itself.
