I suggest a "Sapling" option that acts like a sapling, and when done growing, places a customisable nbt file. I know its already somewhat possible, but hard for some people.
There is sapling block base which is exactly what you are looking for
I may be a bit blind... but I cannot find it. Is it an option in a block/plant?

Yeah, it doesn't look like there is a sapling block base.
At least not in the 2020.5 snapshot.
i think he means the X model (as in the shape of an x) for blocks, but not an actual sapling base for everything
You can still make a plant that looks like a sappling and use procedures to make it grow after some time tho
