Deletion is permanent
sadly no.. impossible :(
Since, Klemen's here it. would be great if they added this feature to reverse it at least for some time
like teh undo deletion button would pop up but then would disapear after a certain amount of time
Personally I just have a folder on my PC called "Workspace Backups" and regularly just copy the entire workspace folder and paste it in my backups folder, got backup folders for mods/modpacks/Workspaces and then save them with the date. That way you can always backtrack to a previous date. Better to be safe than sorry
When changing versions, MCreator also makes automated backup in workspace folder/.mcreator
