Maybe a new fuel that is better than Coal, I don't know if this is a good idea though.
Or a kitchen table or something like that, it makes cooking/creating food a lot better.
Oh I have one make a tektopia like mod, we don’t have a lot of improved villager mods and the ones we do are kinda boring.

coming at that theme, make more village types for almost every biome
And add more ores like tungsten, silver, tin, sapphire, topaz, alluminium, uranium, overworld quartz and i could keep the list for a long time but its to much.
I will make the ores, but idk about the villagers...
And you are fine to list more if you want
