NBT tags are fairly simple, there is a block under the "entity" tabs that is called Set NBT and get NBT. As long as the name you enter in the text box matches the text when you call the tag, then you can name it whatever you want.
The only issue with entity NBT is that it's not very stable. #1 is that the entity will not hold data long-term. If you die/log out/exit the game, the entity will lose the data. Ive found if I have more than around 3-5 different NBT variables on a single entity, it will start to forget some of them, and procedures won't work.
