Setup fails. (Compiled by recent Java 65, instead of 61)

I'm having the infuriating issue i've been followed with everywhere.. I do not know how to solve this. I was fine just before with MCreator 2023.3 (i think it was)
But i decided to update, needing 1.21 for my mod. I went with 2024.3, but now i am getting the following error :
"... Has been compiled by a more recent version of the Java Runtime (class file version 65.0), this version of the Java Runtime only recognizes class file versions up to 61.0"

As a backstory, the Java error hit me multiple times in the face with Dedicated servers or Minecraft itself, or even the launchers. I had tried EVERYTHING.. i tried even downloading every single Java versions. I finally understand why coders say Java is pants.. It really is. And i'm not coding. I'm just facing its issues probably because it is much of a mess in there. 

I just don't want MCreator joining the fest of 'It's either me, Minecraft or the Server' that works. (Yes, only ONE of them work currently, being the launcher and minecraft. Both MCreator and Servers won't work right now with the same issue.
