Different tree models, same sapling?

Hi there! I'm making my mod and for trees I want to make different models of the same tree but with the same sapling. I mean, per example:

I set a sapling, I bonemeal it and there are some chances to appear a tree with leaves or without them.

IS THAT POSSIBLE? 

If you know how to do it, help me (images or links to de procedures will be great, so I can understand)
