How to make custom GUI to replace existing ones?

So I want to completely edit the Inventory GUI (the one you press E to open), but I have a few questions:

1. how do I replace the existing GUI with a custom one or perhaps modify the existing one?
2. how do I add the little player in the black screen into a custom GUI?
