The best advice I can give…

The best advice I can give to making good assets is to stick with the Vanilla style. This means sticking to at most 5 colours per material (for example: if you're making a chair that'd be 5 colours max for the wood and 5 colours max for the cushion) and operating in multiples of 2 with 3D modelling (this means no 1-cube wide parts in models except for very specific circumstances. In Blockbench, stick to flat, 2-wide, 4-wide, 6-wide, etc pieces in your models.)

You could also use the Vanilla Minecraft assets as a basis for your creations as it helps you grasp the vanilla style. Here's a tutorial I made on how exactly to get assets to those assets using just the version installed from your Minecraft launcher: https://mcreator.net/forum/79696/tutorial-how-get-access-vanilla-minecraft-assets-use-your-mods
