Custom boats and signs

I want to create custom boats and signs, but I don't know how. I know that boats are technically entities, but I don't know how to make it go faster on the sea and slower on land. I would also like to make custom signs, but I don't know how. It can? And if you can, how is it done? If they can, they could put pictures of the steps to understand better.
