How to give a custom rendered mob AI? And how to add animations to it?

Hey! I'm still pretty new to this, but I've been having trouble with a mob I custom modeled called a "Sculk Golem." I was wondering how to properly make it's AI work, and how to potentially add JSON animations to it? Thanks!
