is there a way to the off-hand punch?
because I would really like to make something with it like if I'm holding something ill be able to punch with the off-hand

That's simply not something Minecraft supports. MCreator is not physically capable of changing Minecraft's core mechanics and thus it is impossible for them to add something like this. Ever.
