Disenchant item with procedure

I am making a custom GUI that enchants a sword with sharpness, however, I can't find a way to remove enchantments without diving headfirst into NBT. I know how to use NBT (especially for enchantments) but I also can't find a way to remove NBT! Thanks in advance.
