I have the geckolib plugin but i am using 2021.1 version and the procedures are there. Does it work or is it just there for 2020.5?
If so, can I use it 1.16 Mods?

No, Geckolib is made for 1.15.2 modding only, it will not work at all with 1.16. The author said they are working on a port to 1.16, but there has been no activity on the subject for months, meaning it was likely cancelled or given up.
