You need to find a plugin that adds that version (If one exists). Otherwise you really can't (Unless you make your own plugin in which case you probably know enough to develop without mcreator)
You can use 1.12.2 plugin for 1.12.2, although there's no real purpose on that, since using 2020.2 gives you the same outcome for now, as no features from newer versions are ported to plugin.
