I wanted to make a Loot Table for all mobs in a single Loot Table to make all mobs drop a coin but I don't know how to do it and I couldn't find any topic that answers my question

I don't think that is possible I think you need to either make the loot tables seperately or make an enchant that drop coins when you kill a mob using a weapon with that specefic enchant
If you just want all mobs to also drop a coin in addition to normal drops, just make a "when entity dies" trigger and spawn a coin item.
