If you want to make a separate mob you can make a mod, after opening blockbench select "minecraft skin" then "create new model" after that a window will appear where there is the setting "Model" that is by default set on "player wide" set it to the mob you want and then click on confirm, now before doing anything else click on "file" and then on "convert project" you need to convert it to a "modded entity" now you can edit the model of the mob you chose, when you're done export it, import it in MCreator and set it as the model of a custom entity (of course make a texture too)
