The only thing that can cause this is a plugin. Check that all the plugins you have installed support the version you are trying to use.
How do i access the plugins?
Under the user directory, you find a folder called .mcreator, inside you will find the plugins.
I tried everything you just said, it didn't work for me, the mcreator is still stuck on "loading generators".
Then you still have an incompatible plugin. This is the only thing that can cause this.
nope, I have the original plugins from the mcreator download.
nevermind! I fixed it! turns out I needed to delete a folder.

Hey guys hope this helps I had the same problem so i just went into the ZIP file and deleted all the items in the plugins folder.
So 2023.1 > plugins (delete all that's here ) and load it and it should work!
I repeat, the only thing that can cause this is an incompatible java plugin. Do NOT delete MCreator's base plugins as that will only break your MCreator. This will no longer be an issue in the 3rd snapshot as incompatible plugins will now simply not be loaded.
literally its the external plugins.. i got the same error like this and i only needed to update the plugins to their new versions and the problem was gone. mcreator *plugins* aren't the problem. external plugins are.
update them. if there isn't an update for the new versions. wait for the plugins to be updated rather than damaging your workspaces
