I am attempting to put an emphasis on exploration in my mod and to do that i need to find a way to discourage or remove mob farming in my mod.

You could stop mob drops and tie it to exploration. That would discourage mob farming for sure. Do you want to discourage exp farming as well? If so, I don't think it's a good idea since removing drops and exp might make the mobs feel useless.
You can, just reduce spawn limit in area with roof, make spawners only spawn when player are closer.
I did attempt to make mobs despawn as soon as they spawn above y 128, which would in theory break at least 80% of mob farms, the other 20% are on the ground or underground. Also the era of seas will start with a complete flooding of underwater caves and non aquatic, non flying mobs with very few exceptions will despawn as soon as they spawn in said biome.
