I have not tested armor with Cubik yet I know it has some issues with making java models for mobs specifically where Block Bench dose does not have the same issues. However, I have made projectiles with Cubik Studio and it works ok but figuring out the rotation of your model can be hard in Cubik. I recommend making models for .java in Block Bench just because it seems to work better for that kind of thing.

As far as modeling goes just remember the character model size, A player head is 8x8x8 blocks so you want to have 10x10x10 for your model for your helmet.

For other sizes you can download the official texture map off of Mojangs website for Minecraft and mesure how many pixels each body piece is and add an extra 2 on to the size and model using those dimensions You can go over or under but just remember that the model may be inside of the character if its two small.
