How do I replace the health gauge with another image or change the health limit of a player?

As the title says, I'm looking to change the health gauge. How can I do this?

The version is 1.20.1

Your best bet is probably to try messing around with custom overlays. You can align them to match the position of the default health bar, change the priority so it covers up the default health bar, and then give various conditions for their display.
