This used to be possible before the projectile update by setting ammo to air, but alas, no longer. Maybe a check box that allows ranged item to not to have ammo? This will add back a way to make magic weapons, and weapons like guns that use variables instead of individual bullets.

It says next to ammo, leave empty to disable.

You can do this with a simple procedure: in triggers of your bow/projectile launcher go to the trigger 'when right clicked'
and write a procedure something like this: Shoot [arrow of type: insert the thing your projectile is supposed to shoot] from event/target/entity or something like that if you want me to send you a picture of the procedure I can
