Looking for help with naturally generating complex feature

i'm trying to make 2 types of custom trees for my mod- one is basically just a pillar of blocks (facing upwards), while the other is larger and has a bunch of bits that poke out from the sides. i'm looking for help on how to make both of them, since i'm not used to using world generation features yet.

the larger tree has a separate block at the top, smaller stems that grow from the sides, and glow lichen covering it. the smaller tree is much simpler, just being the smaller stem in an upward pillar shape. 

any help getting these to work is appreciated, as i've tried figuring this out on my own, but i don't have the know-how to do it.

it's also worth noting that the stem/log blocks used for these are directional, much like every other log is in minecraft
