my workspace has been deleted, but I still have files.jar can I somehow restore the mod with their help?

Sadly, no. [.jar] files are compiled files designed to be executed, whereas the Workspace are actual folders in the MCreatorWorkspaces folder, (like [.png] photos and [.json] code) which are read to create the workspace in the MCreator program.
If you have deleted workspace folder itself, it may be in "recycle bin", if it is no longer there, then it is gone unless you have some sort of backup
classic bruh moment. everyone has experienced this, so I always make backups of the entire workspace of the mod...
