MCreator 2025.2 supports 1.21.1 and 1.21.4
MCreator 20253. will support 1.21.1 and 1.21.8

It would be easier if there were two versions in one generator because there would be no need to restore the workspace.
What do you mean "two versions in one generator?" Each Minecraft version, something in the code usually changes, meaning one mod cannot be loaded in any other version than the one it was made for.

Yeah that's not possible even if you don't use MCreator because every Minecraft version something changes
