I'm new to this website and I'm not even sure if I am doing this right. I've had very little experience with mcreator. But I'd like to know if it is possible to resize items.

You can make custom model and it can be any size you want.
Yes it's possible I did tutorial about it xD
Go to MCreator wiki page and there go to Advanced video tutorials
It should work with every mc version above 1.7.10
