Player Mobility Modifications/Modifying Vanilla Weapon Behavior?

I figured this would belong in advanced modding because it is not as simple as a block or recipe or anything.

If I want to make a mod that, for example, allows me to strafe to either direction with a new keybind and everything, how would I do it? Same goes for things like rolling to dodge and all of those standard combat game basic movements (i.e. dark souls)

Also, is there a way to change the way weapons behave? Like, if I want to be able to parry by blocking with a shield and then quickly doing a strong hit, or if I want to have swords and axes behave differently (swords would swing side to side and deal the same amount of damage as usual, but with the ability to do a less-powerful poke, or have axes restricted to swinging overhead), would that be possible? Essentially, I want new animations, mobility options, and attack methods. Is this possible? Any help appreciated.

Sounds like a lot of this isn't really possible in the current edition of mcreator, but I did spend a lot of hours on an attempt for some more player movement options with the entity velocity procedure blocks and was able to make some cool things, but nothing as complex as pressing a key to roll. Using entity velocity and facing degree I was able to make a procedure that detects when a player is strafing, so if you'd like access to that let me know and I can help you out
