How can i set player and animals animations?

I wan tto make animations to horse, sword, bow, crossbow, walking, sprinting, shifting etc.

Unless you do some hardcore coding and model making, I'm afraid that might not be possible. You will have to recode the Minecraft player, and create the new animations by hand. I think.
