So, after doing an Hour of Testing, I have made a Procedure that Randomizes Skins.
Here's the code in Screenshot form you can do the rest yourself.
It's compatible with Spawn Eggs btw.

You can configure the mob spawn chances to your liking.
This works best on 1.12.2 Generator for 2020.5

Edited Chances to 0.85 for this just to show it has full compatibility for more than just 10 or even 20 Mobs.

You could Give the dowloand of procedure?
It works great on the 2021.2 on the 1.16.5 . THAT BEING SAID DID YOU EVER FIGURE OUT A WAY TO GET IT TO RANDOMIZE WITHOUT SPAWNing (sorrycaps) all the versions up to the version of the mob with the texture it selects?
I haven't figured out how I could make it so that it gives a random texture when it spawns naturally cause every attempt at that my mob didn't spawn, in fact my mob didn't spawn in general when making any other mob so I'll retry it later today or tomorrow and update this procedure.
