I went to download MCreator 2021.3; and when I did, I couldn't run it because my Mac uses "10.15.7" not "11.0+". Comment with a "^" if you've had the same issue.

Update to macOS monterey.
Indeed, there was a breaking change meaning old MCreator versions might not be compatible with new MacOS, but this mean new MCreator versions aren't compatible with old MacOS either... Just update your MacOS to latest version!
Imagine if Windows had the same problem where you needed Windows 11 for MCreator, Now thats crazy!
Well, if you would play old Windows games, it works exactly that way, Superxolotlz. You won't run DOS or Win 98 / XP games easily, and a lot of them can have issues due to system having different structure and contents.
my problem with updating is most of the other games i play are incompatible with newer mac os versions
