How do I make an entity pathfind and break blocks?

So I'm making an invasion-parasite mod with enities that eat blocks/ores. I think this idea is a great one but my experience isn't that good yet so I can't make it work properly. It would also be great to have it break the blocks slowly like how zombies on hard mode can break doors.

Any possible help is greatly appreciated.
