I stopped using the geckolib plugin due to its limitations, but I don't know any other way to create a mob head without it. Can anyone help me with this?

I really don’t see your problem, why couldn’t a mob just have a head? Just model it and put it in some group, now you can either make some custom animations or set the head group to head movement animation
