1. Create your own models. It is better. Search on the forum.
2. If you want an integrated tool to create models, they will surely never create it because it is a bunch of work, and anyways everyone use Block Bench now.
3. What do you mean by fruit type? Do you mean the possibility to get items in breaking leaves? If yes, just use loot tables.
