I've seen that other people have submitted a 1.16 forge mod. I'm wondering if there is a plugin that allows this. If not should I download a newer version of MCreator?

You can download, but be aware that it can contain bugs or something (but pre-release should be much more stable anyway). Of course making copies of workspace is always recommended too.
As for me, I just copy my 1.15.2 workspace and convert generator, so I feel a bit safer :D but of course that means not using some newer functions of MCreator
