Are changes retrocompatible?

Hello.

For example, I have an axe which can duplicate any log that I destroy.

I update MCreator, I change my workspace settings and the game's version.

Are the changes still there or I must have two different workspaces and redo any change that I make?

If you don't use 1.19.2 specific features, eg. new blocks and items, you can still go back and all changes will be in 1.18.2 version of your mod too

No mod element you made will dissapear, but you can't use 1.19.2 blocks / items / ... in 1.18.2 and expect this to work
