Separate Loottables like Sheep

Does anyone know how to make a Loottable rely on something like Synced Data?
I am aware that I could use the When Entity Dies procedure, however I have elements in my mod that can prevent the death of a mob, and it triggers even when they 'die', and I don't want their loot to be able to be cheesed like that.

I know that Sheep have separate Loottables for each variant, and would like to know how I could do something similar?

Yes, and I've made separate loot tables for both

However, considering they're the same mob just with different colors, I wanted to just get that out of the way due to me still tweaking them, and it being a headache to manage them both at the same time

and also it'd be helpful for other stuff I could use it for
