I am new to mcreator but I think i can help. Maybe youcan use jigsaw blocks. Theres good tutorial about it https://youtu.be/5a4DAkWW3JQ?si=1NfwfdjEehMu-bxg. Idk if it was helpful.
it did help kinda to make rooms and stuff, but it didn't help mack the never-ending rooms im still working on it tho

I remember a youtuber (gargin) made a backrooms mod that you might be able to take ideas from
If I remember correctly, he used biomes to make different variants with different ambiance, but I don't know if how handled world gen works with MCreator, so for world gen, you could probably mess around with features or structure (like features that spawn exactly once per chunk)
now that a think if i make it one chunk big and set it so one spawn at every chunk it will go on forever
