How do I make sure that when I press a mob with scissors, it mob a texture?

How do I make it so that when I press the scissors on a mob, the model of the mob changes (to another mob) and a certain object drops out?Tell us and show us a screenshot, if it's not difficult.

One of my ideas would be to despawn the entity, drop the item and spawn the entity with the different model
