Is it possible ( I don't mind using Java programming, if I need to I will use it) to add compatibility with jei in version 2025.2 (Minecraft 1.21.4)?

since the jei plugin is not updated or is it impossible

I recommend you download the latest version (where the JEI plugin is compatible) on another account on your PC. Next, create the JEI elements you want and copy their code into your recent mod.

I have modified the plugin to work for newer versions, but I have not changed the content. If there are errors you will have to wait for the official release of Nerdy:

Versions now supported:

  • MCreator 2025.1
  • MCreator 2025.2

a question if I put the plugin (valid for any mcreator plugin) in mcreator update, can I remove the plugin and update mcreator or do I need to make a copy of the mod with the downloaded plugin, if it is possible to remove it do I need to delete all the items that involve the plugin or when removing the items are deleted automatically, this question is because I would not like to have the mod stuck in an old mcreator or minecraft version if the plugin has not updated,

I plan to use the plugin for my three mods, published mod (vortextech) and the other two that have not yet been published

It depends. It the update you are updating to supports the version and the plugin it should be fine but make a backup just in case. If you are using a generator that is a plugin then make sure they are both updated.

My general question is whether it is possible to remove plugins from a mod if I delete all the elements added by the plugin so I can update to versions that do not have the plugin (future versions of mcreator)

Yes, you can do that. However, if you don't want to lose anything you've created with the plugin and want to update MCreator, just lock the code for all elements containing the plugin.
