The title is a reference to the Fantastic Beasts series of movies but I don't want any creatures from Harry Potter, I want original ideas.
I already have a lot of ideas but "a lot" is not enough.
The theme is "fantasy" and odd, weird, unexpected,crazy, insane ideas are welcome.
Nether mobs are also fine.

Cave Crawlers:
Souls trapped in caves are engulfed by the darkness. Slowly becoming more and crazier every second. they would kill to get their deformed body out of the underground maze.
These things would deformed versions of the player module. Their face would be dim and hard to see and they would carry mining utensils as weapons.
I know. I have a dark imagination.
Good idea, but they will be found in the dark forest abd will be called "forgotten/corrupted/lost souls"
They will get stronger when attacked because else it would be OP.

How about a mob that doesn't want to strangle you the second it sees you? Like ummmm:
The Tree Guy(or whatever you want to call it):
Sworn protector of trees(Or a tree(hint hint)) will do anything to protect their sacred plants.
They will not attack players and will, in fact, fight evil mobs by throwing axes or logs at them.
If a player is to ever break a tree or punch one of them in their presence the player will have a bad time.
To Hard? Try this:
FLYING PIGS!
These magical creatures will fly around your world with majestic angle wings.
They will drop only the most delicious ham in the world but aren't easy to kill.
They kick, bite, and swooped to protect there delicious bacony insides.
OR:
The... Duck
nothing special just a duck.

Related to fantastic beasts you say? How about a suitcase that is also a big land for animals. You can capture some animals using the suitcase
From my little brother seeing me type this:
A magical unicorn! areeeeeeeeeee
gear dragon!
a dragon made of gears!
it will shoot you with spinning gears of doom!
it will look at you with eyes of doom!
it will fly with doom!
it will sound like doom!
it will be... doom!
and it spits fire.
which is also doom

The tree guy actually has a name, it is an Ent and it is a good idea but the Ai is impossible to make in this version. If they ever add conditions in the AI builder I will make sure to add it.
The flying pig is a good idea but for now there is no more the option to make mobs fly. Klemen said they purposely got rid of it as they want to improve it.
Floating mobs may be possible and I will test that soon. The Everwatching Eye of Ender will teleport (himself/you I'm not sure yet) In a range of 9 blocks.
Newt's suitcase is impossible to make without coding but I will add his Niffler.
Unicorns, both pure and corrupted, will drop Unicorn Blood which is a drink that restores all your hunger, all your saturation, gives healing for 10 seconds and curses you with wither, blindess, poison for life and tries to kill you with anvils, lava and mobs. "You have been cursed"
