There is no option to select colored beds or terracotta in Mcreator 1.8.3, even though, they are in the game version 1.12.2 (the version Mcreator 1.8.3 uses).

You're not wrong, but then again, why would anybody need that?
Maybe if you want some special recipe with terracotta, but I can't imagine anything with beds.
Another reason is because it's just harder to add more blocks to the engine in general.
Just because a reason doesn't come to mind, doesn't mean there isn't one there! The creativity of the community could bring plenty of ideas that are useful with colored beds and terracotta.
They've added terracotta! So now you can make special stuff or whatever.
They haven’t added terracotta. They have the colored ones but not the uncolored one.
Oh, the uncolored ones.
