I've created a custom GUI and I edited the image. However, when the Gradle finished building the mod, if occasionally reverts the image to it's unedited state.
Any help would be greatly appreciated! Thank you,

Lock your mod element to prevent the files belonging to the mod element being overwritten by the generator.
