parts of textures on custom models are blacked out

Hello so I've been having this problem in the recent update where textures haven't been loading in properly for me.

I am making a 1.20.1 version of my rp server's customs mod but I've been struggling with textures. Among other things I kept trying to make it so that flowing liquids enlarge even though I have it set to 32 size but my main issue is with my plushies.

plushie model on a custom block where the head texture and some of the body is missing. same as the right but with a different model

This keeps happening.

Also side note. for the record, these models worked in 1.18.2

they just aren't in 1.20.1 for whatever reason
