How to edit vanilla things or modify the vanilla things and change their model

I can't seem to edit vanilla things (NOT LOOT TABLES PLS FORGET THAT FOR THIS FORUM). Well I tried searching a plugin but can't find one. Anyone please help me with a simple answer because I need to create unbreakable wood.
