You could make a mod with MORE SKELETONS like a skeleton Boss, a zombie skeleton, a baby skeleton, a skeleton with a sword (like the Wither skeleton but in normal), a pyro-skeleton (that fires flame arrows), a skeleton riding a skeleton horse, a skeleton cow, maybe even a skeleton dimension ? the possibilities are endless !
The names could be
"Mo' Skeletons"
"Skeletons Extended" "
"More Skeletons"
"Skeleton+ (or plus)"
"The skeleton mod"
There's a problem... I cant make the mob look like a skeleton as there is only certain mob models :(
Oh yeah ! You're right, there is NO skeleton model.
Then, maybe you could make a mob that adds more pigs.
Like ore pigs (diamond pig, gold pig, coal pig, ...) and/or fire pig (nether), golden apple pig, invisible pig, mad/evil pig ...
There a lots of pigs you could do !

You could try making a difrent kind of food pack
You could make the Pigs drop diamonds,gold and etc when killed
