I'm probably an idiot for asking this, but I honestly can't find it in the list of languages to select. I see so many options for English, where's English (UK)?

No, some things are differents depending of your country. For example, a word used in USA/Canada can be unknown for the UK or the Australia. It's the same thing for a lot of languages like French or Spanish. They bare called dialects.
Also, UK English is en_GB. It was already there.
