I think it would be really cool if you could change things that are already in the game. For example if you didn't like the fact that you can't put shulker boxes in other shulker boxes, then you can remove that feature of the shulker boxes.
it would be overpowered to have shulker boxes inside of shulker boxes.

if you want you could maybe make creepers destroy the entire world
That would be horrible for low end pcs like mine. I can barely play complete vanilla without lag even at render distance 16
I do understand though. Then I could possibly add custom professions to vanilla villagers
