Just asking but why snaphshots are not for production?

well i really wanna make a mod, and im planning a one. But when i saw mcreator have 1.16.5 only on snapshots. I made the mod on snapshot, its like ready for a early alpha release but i remembered it says not for production use. i just wondered, why is that???

Snapshots are not always stable an they are only here to be tested.
