So my mod allows players to craft items that are etched into their own souls to give them powers and consumes experience levels when used. It's a late-game mod which means that you'd get them near the end of the game.
Usually at the end of the game, the game gets too easy for most players, so I need ideas for powerful bosses or enemies that can be found or summoned very late in game to extend Minecraft's gameplay. Those enemies must be difficult to kill with normal equipment (around as strong or stronger than the upcoming warden).
Rules set for the enemies:
1. Enemy must not rely on health only on health to be tough to kill.
2. Enemy must not be Herobrine or something similar to it.
3. Must have at least one unique mechanic.
4. Must be original.
"Simple" ideas :

Maybe a boss like this:
Health: 512
Armor: 100 (50) (0)
Damage: 0
Speed: 0 (teleports)
-Instead of the boss fighting you, it is a healer, summoning 2 strong minions and rapidly healing them (1 every 10 ticks?) while also being invincible.
-Once the two minions get to half their health, the boss will enter its 2nd phase to where it starts to teleport in front of the minions (or you) to make you target it, (still invincible btw) and will start healing the minions less (8 seconds?), but will heal 20 health instead of 1 (maybe change it depending on the minion health you choose)
-Once both minions dies, it will enter its 3rd phase to where it will summon tiny annoying mobs that won't damage you alot (for the armor you'll prob wear during this fight) and the boss will start healing itself (5 every 27 ticks?) (armor will also be 50 instead of 100)
-Once the boss hits 70% of its health (358) its defense will go down to 0 and i am out of ideas of what this phase will be.
i don't know if you are aware, but minecraft can only handle armour up to 30 points, and even then everything after 20 doesn't change how much damage is blocked. what this does allow for though is effects you can add for when armour exceeds 20.
Really to make a proper and well formed suggestion i would need more information on your mod. are you designing it to be single player, or multiplayer. what other things have you already added (for example are there systems in place to increase the amount of resistances or healing the player can receive, are there added ways to gain or remove certain potion effects)
To make a vague suggestion, how about a mob that that leaps, similarly to a spider, and has a chance of dealing magic damage when they attack instead of physical damage. this then forces to player to only engage such an enemy when they have the protection enchantment or entirely rely on skill to not get hit while fighting it
So far in my mod, there's this power System where you craft power cores and apply them to your "soul". Each power core gives the player a unique ability if it's used, it consumes Xp points. So far I have made a speed power core that makes the player run fast with auto jump. And there are two other power cores currently work in progress, one is for shooting fireballs, the other is an ability to send the opponent (either mob or player) into a "Fracture Dimension" which is a dimension made of glass that is used only for fighting there (no mobs spawning there), defeat the sender and you'll be sent back.
I'll be adding more power cores in the future, but as you can see, the players who have power cores infused with their souls are a bit powerful. So that's why I need enemies and bosses that are on par with these powerful players.

you could make a boss that, if you come close enough, he makes a visible forcefield around you, that only drops if you killed the boss, making you unable to escape
